A family café shaped by fresh food, warm hospitality and nearly two decades in the garden.

A family café rooted in good food.

Fraîche Ayres opened in May 2007 inside Starke Ayres Garden Centre in Rosebank, Cape Town.

Surrounded by plants and garden life, the restaurant became a welcoming neighbourhood café known for freshly prepared food, warm service and a relaxed setting. From the beginning, the approach has been uncomplicated: use fresh ingredients, prepare food with care and give familiar favourites a distinctive Fraîche Ayres touch.

The seed Pam planted.

Fraîche Ayres was founded by Pam Miller, whose connection with food, hospitality and gardens developed over many years.

Before opening Fraîche Ayres, Pam restored and operated the historic Old Post House Inn in Greyton, worked in catering at Rondebosch Golf Club and later established Mymering Country Estate in the Klein Karoo. Her cooking was shaped by fresh local produce, home-grown herbs, generous hospitality and a love of beautiful garden settings.

When the opportunity arose to take over a small restaurant inside a Rosebank nursery, Pam brought those interests together in a relaxed daytime café. Fraîche Ayres opened with fresh salads, homemade chicken pie, line fish, quiches, scones and cakes – food made simply, generously and from the heart.

The next generation

Kyle’s journey to Fraîche Ayres.

For Kyle Miller, hospitality has been part of life since childhood. He grew up around the kitchens of the family’s country establishments before gaining international hospitality experience at Stoke Park Country Club in Buckinghamshire.

After completing a Bachelor of Business Science Honours degree, Kyle travelled through South America, Thailand and the Mediterranean, discovering new ingredients, flavours and ways of eating. He later spent two seasons working aboard a yacht in the Mediterranean as a chef, bartender and crew member.

Kyle returned to Cape Town with a broader culinary perspective and joined Fraîche Ayres in November 2010. Working alongside Pam, he gradually took responsibility for the restaurant’s day-to-day operation and introduced his own recipes, Mediterranean influences and fresh ideas to the chalkboard menu.

In 2012, Pam and Kyle published Fraîche Food, a collection of recipes from the restaurant and the story of their family’s culinary journey.

LOTUS Food Truck

In 2013, Kyle launched LOTUS Food Truck, bringing freshly prepared contemporary Asian street food to weddings, private events, festivals, corporate functions and film shoots across Cape Town.

Mill & Press Café

Mill & Press opened at Mason’s Press in Woodstock in 2015, followed by Black River Park in 2018 and a third branch at the Old Castle Brewery in 2020. The cafés also provide corporate catering, office platters and staff meals.

While developing LOTUS and Mill & Press, Kyle has remained closely involved with Fraîche Ayres. He oversees general operations and works with the kitchen team on new menu items, seasonal dishes and daily chalkboard specials.

Front-of-house operations are managed by Jean Bosco, who has been part of the Fraîche Ayres family since 2009. Jean has developed an exceptional rapport with loyal regulars while ensuring that new customers receive the same warm, personal welcome.

Together, Kyle, Jean and the wider team maintain the balance that defines Fraîche Ayres: familiar faces, attentive service, established favourites and a menu that continues to change with the seasons.

Still fresh, still family-owned.

Today, Fraîche Ayres remains a family-owned restaurant with deep roots in Cape Town’s southern suburbs. It is a place for breakfast among the greenery, an easy lunch with friends and familiar food prepared with care.

The restaurant has grown and evolved, but its purpose remains much the same as it was in 2007: to welcome people warmly and serve honest, delicious food in a beautiful garden setting.
